Makes enough for 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Citrus Syrup: Place all the components inside a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the stove and leave to cool completely. Transfer into a clean bottle, seal keeping it chilled, where it will keep for around one month.

Preparing the Premix: Mix the specified liquid ingredients in a sizeable container, leave to sit for one hour, then pass it through , ideally through cheesecloth, to ensure it's completely strained.

When ready to serve: Pour 85ml from the batch mix into your mixing glass filled with ice, and agitate gently for a minute to cool it down. Pour to a chilled martini glass or equivalent, garnish with a few cranberries and complete it using a quick spritz with the mandarin essence over the top.
